Kefir is a probiotics drink that is extremely healthy. It does not contain gluten and consuming this drink reduces intestinal discomfort in people who are gluten intolerant.

Kefir, also known as Bulgarian yogurt, is a fermented dairy drink produced by the composition of probiotic bacteria (Lactobacillus acidophilus) and yeast (Saccharomyces kefir) in a matrix of protein lipids and sugars, all of which are naturally occurring.

Many centuries ago, the inhabitants of an area of the Caucasus combined kefir with milk, and to their surprise, the resulting liquid began to ferment, and thus it became an important food, very similar to the yogurt that we consume nowadays.

The granules that are used to make it have a similar appearance to cauliflower. There are two types of kefir, water based and milk based. In fact, there is actually a third option, which is tea or kombucha based, but this variation has different properties. The most commonly used is milk based as it has the most pleasant taste.

    • Kefir is also effective in the treatment of acne and allergies, thanks to its high nutritional value. Furthermore, it helps reduce the possibility of having colon cancer and is a light laxative. However, if taken when concentrated the taste is quite astringent.
    • It is worth highlighting the fact that it provides B-complex vitamins, calcium, folic acid and an important quantity of enzymes, which are important for the digestion and assimilation of foods, allowing us to obtain the maximum benefit from them and at the same time stimulating natural processes during the ageing process.
    • It is a powerful detoxifying agent and also helps restructure the body´s acid-base.
    • It helps regenerate the beneficial intestinal flora, and stimulates natural defences. Kefir helps with digestion and prevents constipation.
    • It is able to balance the intestinal bacterial flora.
    • It has great regulating power with regards to weight, and is recommended for people following a weight loss diet.
